Pistachios grow in clusters similar to grapes, on trees about the size of mature olive trees. Each nut is encased in a hull or outer skin. Under the hull is a white shell and inside that is the crunchy green nut. When ripe, the hulls change shade and split.
Mature Pistachio tree's, also called old growth trees produce the most flavorful nut. Unfortunately, their crop is less than half of that of newer growth tree's which produce the least flavorful nut. We only buy Pistachios from mature tree's. Which proves the old adage you get what you pay for! We give you more of what you're looking for! Our Pistachios simply taste better!
According to legend, lovers in the Holy Land of the Middle East would meet beneath Pistachio trees on moon lit nights and wait to hear the pistachio nuts crack open, which was a promise of good fortune.
